    This triangular cut of beef from the bottom of the sirloin is extremely flavorful.  It is best to smoke or roast to an internal temp of about 125-130 degrees.  It is also a rare cut at only two tritips per beef!


    MEDIUM: 1.5-1.8

    LARGE: 1.9-2.2

    COWBOY CUT: 2.3-2.6
