The Flat Iron is an extremely tender steak, only second to the tenderloin.  It is a naturally very thin cut steak, that is quick and easy to prepare.  Cook on the grill or in your favorite cast iron pan with your favorite steak seasoning.  Do not overcook!


Medium: 0.5-0.6 LBS

Large: 0.7-0.8 LBS

Cowboy Cut: 0.9-1 LBS

XL: 1.1-1.2 LBS

GRANDE:  1.3-1.5 LBS
